Oyster mushrooms often grow in large over-lapping rows like tiles on a roof. The oyster mushroom's meat is thick and mild in flavor. From your first taste of this mild but flavorful fungus, you will want to use it frequently. It can be substituted in any recipe that calls for mushrooms. Oyster mushrooms are perfect in a fish chowder or in a sauce for meat or poultry. Also excellent in mushroom soup, risottos, and quiche.
